Frost warnings were rife last evening on the radio, but when I was ready to go check my garden for vegetables to quickly pick it was dark enough that I had to take a flashlight with me.
I picked a small container full of the best of the cherry tomatoes. (In fact I found a few medium to regular sized ones too.)
But when I stepped over the marigolds to check on the ragged row of zucchini I found 3 small ones and one super-duper BIG zucchini.
I have a photo to show you! It weighs 6.5 lbs and is 19 inches long.
I already harvested two extra big ones but this takes the prize!
Now I ask you, what can one do with a super-duper zucchini?
Well, the first recipe I ever tried with zucchini called for 2 cups of grated zucchini to make a chocolate cake. That was great!
So I always grate several zucchini - especially the biggies to put into empty yogurt tubs to freeze so I can make chocolate cake many times through the winter! It is so moist, and only tastes of chocolate!
But of late I've also been doing a quickly for lunch or supper that is ready within 5 minutes. A handful of grated zucchini and a handful of grated potato into a frying pan with some oil in the bottom; break an egg or two over that, and stir. If I have some leftover meat and/or veggies in the fridge I toss them in too. In no time I'm sliding it all onto a plate and my meal is ready.
Oh, if you like you can toss in a chopped clove of garlic and some chopped onion first, before the zucchini/potato.
